Pumpkin Pancakes

What better way to celebrate the change of seasons than with a yummy new recipe! I found this one on allrecipes.com


  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar


  1. In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

** I would add that the batter is kind of thick. Spread it out a little after pouring it on your skillet so that you can get it cooked all the way through.**

Living Room- Room to Breath

We painted while the kids were in WI with Nana and Grandpa’s.

We also thinned out the toys and junk lying around. It feels so much more relaxing now. All the clutter was stressful. I hated looking at it and having to pick it up all the time.

The wall above the couch needs something and I would love to have some red throw pillows, but that will come in time.

Today was a good day

Anxiety has been overwhelming me lately. For as long as I can remember, I have a habit of picking up other people’s “stuff” and making it my own to obsess over and worry. I came to an obvious conclusion recently: It hasn’t worked- at all. It hasn’t served me well.

Anxiety tells the lie that I am somehow in control.

I’m wasting time and energy that I should be using to focus on my own business. I have a job that I could do much better if I focused all my attention on it. I’m a teacher to my children, I have a home to keep looking inviting, and tummy’s need to be filled. Mostly, I need to be present as a mom and wife.

So, I decided just to do my own job today. I prayed about the other things that aren’t my job, but I didn’t obsess. I chose to trust. It turned out much better.

We had a happier home today. A quote from one of  my favorite movies: “As Rachel Lynde used to say, the sun will go on rising and setting whether I fail in Geometry or not.” I guess in my case, it’s that the sun will go on rising and setting whether I worry about it or not.

3 Week Countdown

I was looking at my calendar and noticing that there are only 3 more weeks until the Chaska Turkey Trot! I have never specifically trained for a race for as long as I have trained for this one. I’ve already finished 11 weeks of training.

I would love to finish faster than a 9:00/mile pace. I was able to do 2 miles with an 8:52/mile pace a few weeks ago and I have another 2 mile race pace run scheduled for this week. I’m not sure I can sustain a sub 9:00 pace for 3 miles.

I’m looking forward to this run because the Chaska Turkey Trot was my first 5k ever. It will be fun to race there again. I am dreading the hills though. There was a very long hill near the beginning of that course. I’m assuming they will use the same course. This is event draws hundreds of runners. I think there were 600 last year. It’s also chip-timed, has free child care, good food and prizes! What more could one ask for in a race.

Once that race is over, it will be time to start training for a half marathon! That’s a goal for next spring.

A new week

It’s Sunday afternoon. In our house that means that Ethan and Audrey are watching a movie, Isaac is napping and I’m getting ready to go grocery shopping soon. Nathan is also napping right now. I’m usually the one who is napping and not Nathan, but he’s worn out. It’s cold and rainy today. Our warm fall weather is a thing of the past and we are racing toward winter. I hear that snow is in the forecast soon. We’re supposed to get more rain later today so I’m contemplating going for my long run this afternoon before shopping. I don’t really want to do my run, but I know I’ll be glad that I did once it’s done. I need the exercise because I’ve been feeling stressed and have dealt with it by eating huge amounts of cookies and bars.

I spoke with Brian earlier this week and he said he kept checking our site for new photos. I know that food photos aren’t exactly what you had it mind, but I haven’t taken any photos of the kids since I last posted some. I’ll get some new ones soon. Would you settle for a photo of our new bedding? I decided to stop by Shopko a couple of weeks ago. They were having a big sale. I happened to find a bedding set that I really liked and was discounted. I decided that it would be our anniversary gift to ourselves. I’ll post a better picture later when our room is photo-ready!

Thanksgiving is coming soon! I suppose that means we really need to get on the ball to update our Christmas lists. Sorry that this is random and rambling. I mostly just wanted everyone to know that we’re still here. Happy Sunday!

*** Edited to add: I did my long run. 7.5 miles! I ran each mile faster than the previous one (except for the last half mile). ****

Last week in review

  • Celebrated our 7th anniversary.
  • Shipped Ethan and Audrey off to Nana and Grandpa’s. They had so much fun!
  • Ran 23.5 miles (in the last 7 days). Today I did 4 – 1k intervals. My goal was to complete them with a 8:50/mile pace and I did it! Very hard, but I did it!
  • Painted our living room.
  • Cleaned out closets.
  • Thinned out some toys.
  • Cleaned out the shoe bin. We had lots of shoes that were outgrown or not being used any more.
  • Took two trips to the thrift store to drop off bags of things that we don’t need or want. I think I dropped off about 3 boxes and 6 garbage bags.
  • Ate at Chipotle.
  • Ethan and Audrey returned!
  • Celebrated Joyce’s birthday.
  • Ate too much.
